I absolutely adore Asian cuisine. And Sang Choi Bao is one of my favourite dishes! It’s fresh, and the textures in the dish are awesome. Crunchy, warm, soft. It’s got it all! I make this dish every few weeks for lunch. And sometimes, I pop the chicken mince mixture in a bowl with the lettuce cups that have been cut up so it’s like eating a salad. This is a super-easy version, as sometimes, we can be time-poor.
Chicken mince (how much you use depends on how many people are eating)
2 spring onions, finely chopped
1 stick of celery, diced finely
1 teaspoon of fish sauce
1 teaspoon of sesame oil
Cos lettuce leaves
1 teaspoon of grated ginger
In a medium size pan, heat the sesame oil on a medium heat. Add the chicken mince, carrot, spring onion, celery, ginger and cook until chicken in cooked through. Place into a bowl and mix in the fish sauce. Place small amounts of the mixture onto well-washed cos lettuce leaves (cups) and top with coriander. Yummo! As stated earlier, this is a VERY easy version! But, still super tasty.
