Hello everybody, and a Happy New Year to you all!  I’m back!  I’ve had quite the break from blogging, as we welcomed a baby boy on October, 24th at 4.45pm.  We named him Roy – little brother to our two daughters, Darcy 5 and Maggie 3. All is going so well!  I can’t believe he is already 10 weeks old.  Where does the time go?  As you can imagine, it has been quite busy, hence my absence from posting.  But, I promise to add blogs several times a week for you to stay on track with your health and wellbeing.  Yesterday, I posted a photograph on my Instagram account, (@the_nourish_nook) of a healthy slice.  Being pregnant, then enjoying the festive season, I can honestly say that yes, I enjoyed quite a few treats! So, with the new year, came a healthy outlook once again.  I feel my best when I’m eating well and getting the body moving.  I also feel my most spiritual when I eat well.  Over the past three days, since the New Year started, I have been enjoying wholesome foods, regular exercise and daily meditation.  I can feel my body and soul thanking me for it straight away!  So, I made sure I filled my fridge and pantry with beautiful, clean food and this healthy slice was a welcome addition!  It’s my own recipe, but it’s super easy and so healthy.  The recipe is as follows:

3/4 cup pistachios

1 cup macadamias

1 cup cashews

1/2 cup pepitas

1 cup pecans

1 cup pecans

1/4 cup chia seeds

10 medjool dates, deseeded and chopped finely

1/4 cup dried cranberries

1/2 cup gogi berries, (soaked overnight and chopped finely)

Blend all ingredients until very fine.  You may have to do it in a few batches.  Place all fine ingredients into a large bowl and mix well together.  Warm approximately 4 tablespoons of coconut oil until runny.  Add approximately 4 tablespoons of runny honey and maple syrup and mix mixture together until it can be pressed and it holds together.  If it feels too dry, simply add more coconut oil.  (If you add more maple syrup or honey, it will be too sweet as the dates make it quite sweet anyway).  When you have the right consistency, simply press the mixture firmly into a large tray or serving dish of your choice and refrigerate for at least 2 hours.  I don’t really make dishes like these to a strict recipe.  Just a bit of trail and error!  Just add your own bits and bobs, or eliminate anything you don’t like!  Anything goes really.  Slice and enjoy! xx
