PIC4823I often get asked about healthy snacks.  What sorts of things do I snack on in between meals?  Let’s face it, it’s easy to reach for something as a quick-fix, but often, when those cravings hit, we can go for the not-so-healthy option.  I love snacking on high-protein foods as they are slow-releasing energy.  Nuts, seeds, gogi berries.  I also love making energy balls.  I have tried and tried new recipes to get that perfect mix of flavours and textures and I’ve finally found it!  Enjoy! xx

1/2 cup LSA
1/4 cup activated buckinis
1/2 cup almonds
1/2 cup cashews
1/4 cup bee pollen
1/4 cup sultanas
6 dates
1/4 cup raw honey
1/4 cup cold-pressed coconut oil
1/4 cup shredded coconut
1/4 cup gogi berries
1/4 cup dried cranberries
1 1/2 tbl raw cocao
1 tblsp coconut sugar

In a food processor, combine activated buckinis, almonds, cashews, bee pollen, sultanas, shredded coconut, gogi berries and dried cranberries and pulse until fine. Add this mixture to a large mixing bowl. Finely chop the dates. Add these to the mixture. Add honey, melted coconut oil, LSA, cocao and cocnut sugar and combine with your hands. Roll into bite size balls. If mixure is a little crumbly, simply add extra honey or coconut oil. I find the balls form easier if you pulse the mixture in your palm first to warm the mixute. Refridgerate for at least 2 hours before eating! (Will keep for up to one week)
