DSC_8645This recipe I half made up, half followed a recipe!  It’s a goodie for either lunch or dinner.  It’s light, easy to make and pretty!  The quantities below will make for one to two people, but just double, triple or quadruple for more people!


Chicken tenderloins

2 tablespoons grape seed oil (or olive oil)

Fresh pomegranate seeds

2 tablespoons of lemon juice

1/2 teaspoon of dijon mustard

1/2 tablespoon of sherry vinegar

2 teaspoons Pomegranate molasses

mint leaves to garnish


In a bowl, mix lemon juice, pomegranate molasses, oil, dijon, vinegar and pomegranate seeds until well-combined.  Grill or barbecue chicken tenderloins until just cooked through.  (You don’t want to overcook the chicken so it gets dry). When cooked through, place in a bowl with mixture prepared earlier.  Serve onto a plate and garnish with mint leaves.  Simple as that! The sweetness is divine with the chicken!  Enjoy xx
