DSC_8677Coming into the warmer months, its so lovely to experiment a lot with salads.  I love salads for lunch, but I feel that I need to have some sort of meat in there too to really make me feel satisfied.  That could be chicken, salmon, tuna, beef.  Whatever takes your fancy!  I made this combination of chicken, vegetables and quinoa not so long ago.  And it was well and truly satisfying in every sense of the word!

INGREDIENTS:

1/2 chicken breast or chicken tenderloins (enough for your dish)

1/4 cup of tri colour quinoa (or quinoa of your choice)

1/4 zucchini

1/2 red onion, sliced into bite-size pieces

Sweet potato (enough to have in the dish)

1/4 red capsicum, sliced into bite-size pieces

METHOD:

Steam all mentioned vegetables until tender.  Remove from heat and let cool.  In a pan on medium heat, pop your chicken pieces into a pan with a little olive oil.  (Or oil of your choice). Brown the chicken and remove form heat.  Feel free to use a little seasoning or flavouring with spices etc.  Anything works!  Cook your quinoa to packet instruction, drain and set aside. In a large bowl, toss all ingredients and combine.  You can even add a sauce of some kind to combine.  Sweet chilli would work well.  Serve on palate and top with rocket.

This dish does have a couple of elements, but so worth  it!  Don’t overcook your vegetables too much, as vital nutrients are lost during the heating process.  Yummo! xx
