IMG_2775I am a huge fan of Asian flavours.  Ginger, sesame, coriander.  It’s all divine!  Today for lunch, I made this salad and accompanied it with a smoothie.  Huh? Salmon with a berry smoothie?  Yes!  Why not!?

ASIAN SALMON SALAD:

INGREDIENTS:

8 snow peas, cut in half

2 spring onions, finely chopped

1 handful of coriander leaves

1 handful of spinach leaves, finely chopped

1/2 Lebanese cucumber, finely chopped

1 stalk of celery, finely chopped

1 handful of purple cabbage

Hot-smoked salmon (I bought this from my local market.  I simply crumbled it on the top.  Much easier than doing it yourself!)

DRESSING:

INGREDIENTS:

1 tablespoon of apple cider vinegar

1 knob of ginger, grated

Juice of 1 lime

1 teaspoon of fish sauce, sesame oil and tamari

1/2 clove garlic, crushed or grated

METHOD:

Place all ingredients (except the salmon) into a bowl and mix together.  Place all dressing ingredients into a jar and mix well.  Pour the dressing over the salad and mix well.  Using your hands, grab handfuls of salad and place neatly onto a plate.  Top with the salmon.

JO’S BERRY ACAI SMOOTHIE

1 banana

3/4 cup of frozen berries (I used frozen organic raspberries, blueberries and strawberries)

10 macadamias

4 dates

3/4 cup coconut water

1 teaspoon chia seeds

1 tablespoon acai powder (bought from health food stores)

METHOD:

Place all ingredients into a blender and whizz for one minute.  Pour into a glass and top with chia seeds.  Drink immediately.

Smoothies are also a fantastic post or pre-workout boost.  YUMMO! xx
